OMG! Total yumness!

I had to share… last week, I made a stovetop frittata (a crustless quiche made in a pan), cut it into wedges, and took it to work for an afternoon snack. I usually have it with a slice of toasted Ezekiel bread and a little olive oil. It was good, but not quite great.

But today… NIRVANA!

I made the frittata last night with mushrooms, spinach, onion, garlic, red and yellow peppers and lots of spices. Last week I made it with broccoli, but I ran out. The lack of broccoli makes a difference! It’s not as watery; it has a much denser consistency without the added vegetable.

I had it tonight for my 6PM meal, but instead of the little drizzle of olive oil, I spread garlic hummus on the toasted bread and topped it with the frittata. I’m telling you, the heavens opened up. The angels sang. The seas parted. Something about the mix was pure perfection, and even better than perfection, it’s ALL CLEAN.

I tell you, it’s so much easier to follow a plan when the food is delicious.
